Quinoa is an ancient grain with nutty taste and chewy texture. It can be in many dishes such as salads, soups, stew or stir fry and can be a main dish or a side dish. The flexibility on mixing it with others can able you to have it in any meal of the day. You can get bored with it because you can’t only mix it in anything but appetite can love it too.
In making salad with this grain is being finished mostly in popularity into with quinoa and black beans recipes. Both of them can provide heap amount of protein and plenty of vitamins and minerals. So you don’t need to bother to eat meat to gain protein. Some meat can have unwanted fat and excess cholesterol that your body doesn’t need. In this recipe, chicken breast will be used as it is being known as the leanest meat available.

1 cup of quinoa (cooked) 1 clove of garlic (minced)
2 boneless and skinless chicken breasts (diced) 1 teaspoon of paprika
1 teaspoon of ground cumin 1 teaspoon of coriander
teaspoon of salt teaspoon of pepper
1 pinch of cayenne pepper 2 plum tomatoes (diced)
2 tablespoons of extra virgin olive oil 3 green onions (sliced)
sweet red pepper (diced) 1 cup of corn kernels
2 cups of cooked black beans, drained and rinsed 2 tablespoons of lime juice
cup of fresh coriander (chopped)
Directions
1. In the saucepan, heat half of the oil over medium heat. Cool garlic and paprika. Stir them until fragrant for about 30 seconds.
2. Add quinoa then 2 cups of water in bringing to boil. Reduce heat and cover. Let it simmer for 15 minutes which there would be no liquid left and quinoa is tender.
3. In a large skillet, heat the remaining oil with the supervision of medium heat. You’ll saut chicken, ground coriander, salt, pepper, cumin and cayenne until browned for about 5 minutes.
4. Shove in the addition of onions, tomatoes, red pepper, black beans and corn. Stir until red pepper is tender crisp and chicken shouldn’t be pink inside within the period of 5 minutes.
5. Transfer to a large bowl then mix in quinoa, coriander and lime juice. Toss them altogether.
